I played Skyrim for about two weeks straight when it first came out, haven't played since. It's addicting, sure, and the graphics sure are pretty, but I prefer Morrowind, especially when it's modded out. So much more to do, so much more customization and player freedom, and the UI doesn't suck massive balls like the one in Skyrim.
Overall I feel like Skyrim was way too stripped down and streamlined just to appeal to the modern generation of gamers used to MW2 style gameplay.
